at the asian market i like to go to they have this great BIG bag of frozen veggie dumplings almost 3 whole pounds worth. i love it! i also love creating fried rices, i feel they are sort of the kitchen sink of asian foods, throw in all your almost dying veggies and make them yum! i’ve dubbed this fried rice a “summer fried rice” why? well because it has all my dad’s fresh veggies in it. the man i swear gives me about 3 giant cucumbers everytime i come over. thus the rice had cucumber, onion, tomatoes, and carrots plus fresh basil and ginger, always add ginger. my dumplings stemmed while my peanut sauce simmered. who needs chinese take-out when i’ve got this?

why don’t i do this every time i make pasta?!

when i started dishing up the meal for friends to eat the list got pretty long of homemade goodness….bread was homemade, noodles made that afternoon, grew the basil myself, veggies in salad came from family garden and for dessert homemade pie including my own crust. what i created for meatless monday is no doubt one of my favorite at home meals/treats to myself of all time……pasta with tomato sauce, garlic-basil cheese bread, salad and french silk pie for dessert. i love this meal. its my date with myself meal. its comfort on a plate meal. its put in moonstruck and eat italian food meal. and of course drink loads of wine. the question though i caught myself asking over and over….why don’t i make fresh pasta noodles all the time? seriously it is so easy and its sssssooooo good. i think perhaps i’ve found my next cookbook challenge the pasta bible!

after a recent trip to the world of bulk shopping i came to realize i had stocked up on everything greek…..olives, artichokes, tomatoes, feta, red onion. how many things can i turn greek was the question pasta and pizza top of the list. i made a wholewheat-honey crust….secret tip to making your own dough….let it rise twice, it makes it lighter and fluffier which is really good for a hearty wholewheat. instead of traditional sauce i used tahini, loads of it and then all my mouth watering greek toppings. yes my eyes were a bit bigger than my stomach as i rolled out the giant size pizza crust but it was so pretty and soooo tasty! any ways who can beat leftover pizza!

its summer time and what other perfect meal exemplifies this but hotdogs and french fries. i, over the years, have taken a fancy to smart dogs for my hotdog eating pleasure. this batch i slow cooked in some carolina mustard bbq sauce and then in true carolina fashion topped it with coleslaw. french fries of course for the side but not just any ordinary homemade french fries mine were tossed in fresh rosemary. i highly recommend dipping those fries in garlic mayo. oh summer i love thee!

meatless monday — “hey lets exchange meals!”

my friend ingrid and i have been friends since we were two, so that would put us at 28 years of friendship now i do believe. we both moved back to our hometown at the same time and she has become a frequent diner at my dinners over the last couple of years. a few months ago ingrid became an official home owner. her new goal to improve her culinary skills. she checked out cookbooks from the library and came up with the idea to exchange meals with me. one week i cook for her the next week she cooks for me. her first attempt a curry dish for meatless monday.

the curry dish we dubbed “tomato-vegetable curry” i provided her with a few tricks on cooking rice, something she declared is totally foreign to her. when all was done we bowled it up and i’ll say it was yum due to the fact i went back for seconds. after doing the dishes we played with her kittens she is fostering and then headed off to a downtown springfield tradition of half price wine night at the mudlounge to celebrate the beginning of her culinary journey.

what to do when you have bread going stale? bread pudding! it’s not just a dessert my friends. in fact my favorite form of bread pudding are the savory ones. i decided to try my hand at a summery bread pudding for meatless monday. i toasted up one of my leftover french loaves creating giant croutons. the next layer was cherry tomatoes of various colors mixed in with garlic and basil. then i poured my egg mixture on top and the final layer was tons of goat cheese. i also mixed a ginger-carrot salad to go along with the bread pudding. i decided it was a success when my dinner guest went back not only for seconds but also thirds!

it was my birthday and what this birthday girl wanted was cast iron. my big sis let me pick out a piece and what i choose was the grill pan and with some birthday $$ i got the cast iron press to go with it. what did i envision while shopping…..homemade painni heaven. a little impromptu meatless monday dinner party with my friend ingrid as the experimental taste tester of my first attempt at homemade painnis, i made up a batch of fresh pesto, loaded up my bread of the week, a pain polka, with diaya mozzarella cheese, and pressed away. the sandwiches were accompanied with a spring mix salad tossed in poppy-seed dressing. glasses of wine and gossip flowed. and the painnis….to die for!
